Chris Rubeck discovered his love of food at a very young age, watching and learning as his mother and grandmother worked their magic around the kitchen. This love led him through an expansive culinary career, working in brunch spots, sushi joints, and far beyond. With all this experience, knowledge and passion, he presents Denver and the surrounding areas with Ruby Ru’s Street Eatery.

From his fun and funky food truck, he serves sausages, chicken tacos, chicken banh mi bowls, and his glorious signature specialty: Bourbon Chicken. You can either get it in a taco with house-made slaw, grilled pineapple and spicy aioli, or served over white rice with your choice of mac & cheese, cajun potatoes, or grilled veggies.
