Chef Jorge Aguirre spent years working, and with an early retirement, decided to pursue his real passion in cooking. His dream was to bring the exotic spices and hearty flavors of Colombian cuisine to Denver, and he succeeded. From empanadas to tamales to arepas and paella, each dish is hand crafted and bursting with regional flavor.
